Mellow Dark Chocolate Cake

Ingredients: 200g grated Le Conté™ dark chocolate, 60g butter,6 egg whites,120g sugar, 6 egg yolks, 50ml fresh cream, 180g self-raising flour


1.Melt the chocolate in a pan over boiling water, and when fully melted leave to cool to room temperature.

2.Beat the butter until smooth and creamy.

3.Beat the egg whites until stiff peaks form and then fold slowly through the melted chocolate, stirring the mixture thoroughly. Sieve the flour into this mixture, and mix through well.

4.Add a large spoon of the beaten butter to the mixture and combine well. This is used to adjust the density of the mixture, so don’t worry if the mixture foams a little.

5.Add the remaining beaten butter into the chocolate mixture 1/3 at a time. Gently stir until there is no color variation and no chocolate sediment. Stir the mixture quickly and lightly.

6.Put the mixture into a baking tin and place onto the second shelf from the bottom of an oven preheated to 160 °C. Bake for 50 minutes.

French Chocolate Toast

Ingredients: 50g chocolate, 150ml milk, 1 egg, 4 teaspoons strawberry jam, slightly diluted with a little water, 8 pieces of white bread, crust removed and cut diagonally, butter or vegetable oil, 40g soft sugar.


1.Cut the chocolate into small pieces, put them into a small saucepan, add the milk, and heat over a moderate temperature stirring all the time until the chocolate is completely melted. Then put it aside to cool slightly.

2.Beat the egg in a large bowl, and then stir it through the warm chocolate milk.

3. Heat the slightly diluted strawberry jam, and put it aside.

4.Place the bread pieces into the chocolate milk. Heat the butter or vegetable oil in a frying pan. Then fry the bread for 2-3 minutes on both sides, until crisp.

5.Sprinkle the soft sugar onto the bread, and then top with hot strawberry jam.

Chocolate Ice Cream

Ingredients: 4 egg yolks, 140g white sugar, 45g water, 250ml unsalted butter, desired amount of chocolate and chopped nuts.


1、Beat the egg yolks until they turn lighter in color.

2、Boil the sugar and water over a low heat until it turns to syrup and the temperature reaches 115 °C. Pour the beaten egg yolks in slowly.

3、Add the chocolate and chopped nuts, and stir thoroughly.

4、Beat the butter, and stir it thoroughly through the mixture.

5、Pour the mixture into a container, and place it into a freezer without stirring any further.


1、Usually when making ice cream, whole eggs would be used. But this method is simpler, as the mixture doesn’t need to be stirred before it is frozen. The finished product is very delicate and smooth.

2、It is not easy to measure the temperature of syrup when it is heated. If you don’t have a candy thermometer, simply bring it to the boil over a low heat and then simmer it over a medium heat for a few minutes.

3、If using the egg white as well, slowly pour in the boiled syrup when beating the eggs. The rest of the steps are the same. The finished product is also very smooth.

Cola Chicken Wings

Ingredients: half a chicken, 1 can cola.


1、Cut the chicken wings into pieces, and salt for 15 minutes. Heat the oil and then add the leek and ginger and fry for a short while.Stir through a little soy sauce, add the chicken wing pieces, and stir-fry them until they turn brown. Pour the cola over the chicken wing pieces, bring it to the boil and simmer over a low heat until the sauce thickens.

2、Blanch the chicken wings with hot water, and then place them in a pot. Add the cola, leek and ginger and bring to the boil over a high heat. Simmer over a low heat until the sauce thickensIncrease the heat, add a little salt and simmer for a few minutes.

3、Marinate the chicken wings in cola, soy sauce and sugar for about 30 minutes. Bake the wings in an oven for 1-2 hours. Turn the wings over and bake for another 30 minutes. Alternatively, fry the marinated chicken wings in hot oil until golden, then add the remainder of the marinade and simmer for a while. Before serving, drizzle with some lemon juice.


Chicken is rich in various proteins. It can be easily absorbed, and provides good nourishment for the body. In this dish, the chicken absorbs the cola which gives it a wonderful taste.

Shrimp and Potato Salad

Ingredients: shrimp meat, potatoes, lettuce, mayonnaise.


1.Boil the potatoes, then peel them and cut into pieces. Stir through enough mayonnaise to generously coat the potato pieces.

2.Fry the shrimp meat until it’s cooked.Arrange lettuce leaves on a flat plate, pile the potato salad onto it and lastly put the fried shrimp meat on top of the potato.


This dish is rich in calcium. It also contains phosphorus, iron, protein, fats, vitamins A, B1 and B2, and other nutrients. The strong taste and distinctive flavor of the mayonnaise makes the salad very appealing.

Chocolate Nut Cake

Ingredients: 70g self-raising flour, 70g custard powder (optional), 200g Le Conté milk chocolate (or cocoa powder), 55g cream, 45ml vegetable oil or melted butter, 5g salt, 6g baking powder, 80g sugar, 4 eggs, some chopped nuts, white vinegar, icing.


1、Separate the egg yolks and set the white aside for later use. Sieve the flower, and mix through the salt, baking powder, custard powder, grated Le Conte milk chocolate/cocoa powder, and stir the mixture thoroughly.

2、Add 20g of the sugar to the egg yolks. Beat the mixture with an electric beater until it turns a creamy color and the sugar is completely dissolved.

3、Add the oil or butter to the mixture and quickly stir it.

4、Add the cream to the mixture and quickly stir it.

5、Add the flour mixture to the egg/cream mixture 1/3 at a time, stirring from the bottom up.

6、Add 1-2 drops of white vinegar to the egg whites, and beat with an electric beater for about 30 seconds. Add the remaining 60g sugar, 20g at a time, beating the mixture until stiff peaks form.

7、Add the beaten egg whites to the mixture 1/3 at a time, stirring from the bottom up. Pour into a baking tin.

8、Sprinkle the chopped nuts over the top, and place the baking dish onto the middle shelf in an oven preheated to 180 °C.

9、Bake for 20-25 minutes and then turn the temperature down to 170 °C. Bake it for a further 15-20 minutes.

10、Remove the cake from the oven and turn it upside down onto a cooling rack.

11、After the cake is completely cool, remove the tin, turn the cake the right way up, and spread icing over the top.

Homemade Chocolate for Valentine’s Day

Ingredients: cocoa powder, cocoa butter, nuts (de-skinned), sugar, milk


1、Spread nuts evenly onto a tray and place in the microwave oven, and bake on high for 3-5 minutes.

2、 Heat some water in a steamer and then put a large bowl onto the steam tray. Place the cocoa powder, cocoa butter and sugar into the bowl, heating and stirring until the mixture becomes thick and pasty – it is finished when the mixture is very sticky and falls off a spoon slowly.

3、Add the nuts to the paste, and then a little milk and stir through until thick and pasty again. Leave to cool.

4、Put the mixture into the fridge for 5-10 minutes. Remove from fridge and heat it again until it melts, stirring constantly. Add some sweetener or other such ingredient to taste.

5、Pour the mixture into a tray and leave to cool.

Beef Brisket in Red Wine

Ingredients: 500g boneless beef brisket, 1/2 onion, 250ml red wine, Cooking oil, 150g ketchup, Pinch of salt, 2 teaspoons berry sugar, 800ml water.


1.Chop the onion finely.

2.Cut the beef brisket into small pieces and then place them evenly into a container. Sprinkle with salt and drizzle with red wine. Seal the container with cling film, and put it into the fridge for about 4 hours. Remove the meat, and set the juices and onion aside for later use.

3.Put two tablespoons of cooking oil into a pan, and heat it. Add the beef brisket pieces, and fry them until browned all over. Add the juices, onion and the 800ml water. Bring it to the boil over a medium heat and then pour into a stewing dish. Add the remaining ingredients. Simmer over a low heat for about 90 minutes until the meat is tender and the liquid has evaporated.

Champignons and Pork Ribs in Red Wine Sauce

Ingredients: 2 pork ribs, 1 glass red wine, 1/2 lemon, 1 onion, 20g flour, 1 teaspoon sugar, 1 teaspoon cornstarch


1.Rub salt into the pork ribs, and cover with flour all over. Chop the onion finely Squeeze the juice from the lemon, and finely chop a little of the rind.

2.Heat the oil, and then fry the rib until golden all over, then remove from the pan.

3.Add the chopped onion to heated oil and fry for a few minutes. Add the chopped lemon rind, lemon juice and red wine. Add the rib and heat through.

Fruit and Vegetable Salad

Ingredients: Pear, salad vegetables, boiled egg, grapefruit, purple cabbage, baked almonds.


1:Slice or shred all the fruits and vegetables, and place them in a large salad bowl.

2:Add enough olive oil to just coat and then add salt and pepper and mix through.

3:Sprinkle the baked almonds over the top.


Tossed salad contains many vegetables, fruits, and a lot of vitamins, so this is a very healthy dish. It is advisable to use virgin olive oil, which is considered to be the healthiest. The baked almonds (or walnuts if you prefer) add a special touch to the salad.
